Puttu is a popular and healthy breakfast dish from the South Indian state of Kerala, as well as parts of Tamil Nadu, Karnataka, and Sri Lanka. It is essentially a steamed cylinder of coarsely ground rice flour layered with fresh grated coconut. The mixture of rice flour, salt, and water is carefully moistened to a crumbly consistency, then tightly packed in a special cylindrical steamer vessel called a puttu kutti (or traditionally a bamboo or coconut shell maker) in alternating layers with coconut shavings. It is then steamed until soft and fragrant. Puttu has a mild, earthy flavor and a soft, crumbly texture. It is famously served with either sweet accompaniments like ripe banana and sugar, or savory dishes, most notably Kadala Curry (a spicy, rich black chickpea curry made with a coconut base).
