Chapati, often used interchangeably with the term Roti, is a staple unleavened flatbread from the Indian subcontinent, as well as parts of East Africa and the Caribbean. It is traditionally made from just three main ingredients: whole wheat flour, known as atta, water, and sometimes a pinch of salt. The dough is kneaded until soft and pliable, then rolled into thin, circular discs. These discs are typically cooked on a hot flat griddle called a tawa and then often exposed briefly to a direct flame, which causes the bread to puff up into a soft, balloon-like sphere (in which case it is often called a phulka). Soft, warm, and highly nutritious, Chapatis are served at almost every meal and are used as an edible utensil to scoop up various curries, vegetables (subzis), or lentil stews (dals).
