Kerala Beef Fry (also known as Beef Ularthiyathu or Beef Roast) is a highly celebrated, intensely flavored, and dark-colored dry roast from Kerala cuisine. It is prepared by first pressure-cooking bite-sized beef pieces until tender with a marinade of strong spices (like pepper, coriander, and chili), shallots, ginger, and garlic. The meat is then slow-roasted in coconut oil in an open pan, along with generous amounts of curry leaves and fresh coconut slices (thengakothu). The prolonged roasting process is crucial, as it reduces the cooking liquid and caramelizes the spices onto the beef, giving the dish its iconic rich, dark color and complex, smoky flavor, making it the perfect savory and spicy side dish for Kerala Porotta or Ghee Rice, and a popular menu item at establishments like Sulthan Biriyani Centre in Koppam.
