Kerala Beef Dry Fry, often referred to as BDF or Chilly Beef (especially in the Cochin/Palakkad regions) and distinct from the more common Beef Ularthiyathu (Beef Roast), is an appetizer-style dish where pre-cooked beef pieces are deep-fried until very dry and crispy. The beef is first cooked until tender, typically with a basic spice marinade, and then cut into smaller slices or pieces. These pieces are then coated in a second, spicier marinade that often includes crushed chili, cornflour (for crispiness), and a touch of soy sauce or vinegar. Finally, the coated beef is deep-fried in coconut oil and quickly tossed with fried curry leaves and slit green chilies, resulting in an intensely flavored, chewy, and spicy side dish that is popular as a “touchings” (snack) with drinks or served with Porotta.
