Shawaya Chicken Mandhi is an Arabian rice dish that is a variation of the classic Mandhi, distinguished primarily by its cooking method for the chicken. Like all Mandhi, it features aromatic Basmati rice cooked in a subtle stock with light Mandhi spices and dried lime, but the Shawaya chicken is typically marinated in a robust Arabic spice blend and then cooked using a rotisserie (spit-roast) or slow-grilling technique, resulting in a juicy, tender meat with a crisp, richly flavored exterior, which is then served over the fragrant rice, often alongside a tomato-based salsa (Salata Hara) and mayonnaise.
