Beef Roast

Beef Roast, also famously known as Beef Ularthiyathu or Beef Dry Fry, is a signature dish from the South Indian state of Kerala, where chunks of beef are first pressure-cooked until tender in a robust mixture of aromatic spices like coriander, chili, turmeric, and pepper, along with ginger, garlic, and vinegar. The cooked meat is then slow-roasted in coconut oil—a key to its authentic flavor—with slices of coconut, green chilies, shallots, and curry leaves until it achieves a dark, rich, and dry coating of the deeply-flavored masala, making it an intensely savory and spicy delicacy often enjoyed with Porotta (layered flatbread), Appam, or rice.
